It has been modelled just like La Roja, it travels like Spain’s national soccer selection, and just like they did a year ago, it visited to Panamá.

Chef Carlos Durán, captain of Spain’s Professional Cooking Team has visited Panamá to offer a presentation to culinary arts students and future chefs who study and train in this Central American country. The presentation was held at Riu Plaza Panamá where Durán also shared knowledge with hotel staff who are part of Panamá’s culinary team competing in the regional contest on the road to the Bocuse d’Or. The team is being coached by the hotel’s Executive Chef, Spanish Raúl Vaquerizo.
Durán’s presentation was introduced by Spain’s Ambassador to Panamá Jesús Silva, and attended by other Spanish dignitaries and Spanish Chef Andrés Madrigal, who will be opening a restaurant in Ciudad de Panamá shortly.
“La Roja de la Cocina”, Spain’s Professional Cooking Team, was constituted last January with the aim of representing Spain in international culinary competitions and, in doing so, of disseminating and promoting gastronomy as a good that fosters a cultural interest among peoples and countries, and also economic development and the foods from Spain. The project is supported by the World Gastronomy Institute and endorsed by Spain’s Government’s High Commission for Marca España.
This team, which already won a European championship organized by the World Association of Chefs Societes in Greece, is integrated by reputed Spanish culinary professionals in various disciplines (kitchen, cellar, dining room, and even ham carving, under the direction of Master Florencio Sanchidrián,) and supported by some of Spain’s top chefs, gastronomic institutions, and the most prestigious names in the food and wine sector, who also provide advice to this promotional project. National competitions will be organized to select team members for upcoming competitions
